The Irpinia Campi Taurasini DOC “ Sella ” is a ruby-red wine with aromas of morello cherry, plum, and berries, with hints of spice. Its vineyards, which produce a quality Aglianico grape , are located on clayey soil and are trained using a system known as espalier , one of the most widespread cultivation methods in the world, in which the vines are trained in rows of varying lengths, made of wooden, concrete, steel, or plastic poles, to which two or more galvanized steel wires are attached and tensioned through sturdier posts positioned at the ends of the row. Spurred cordon is the pruning technique used.

Timings, processing methods and uses
The harvest period is the first ten days of November and concerns approximately 4,000 vines per hectare, from which, in optimal conditions, a production of approximately 70 quintals is obtained. During the storage period, it is left to mature in barrique French oak barrels for 4 months, followed by aging in 500-liter barrels for 12 months. The wine is then bottle-aged for 6-8 months.
In its optimal conditions, it can have an alcohol content of 13-14% vol. and is characterised by a dry flavour, great structure and elegance, with a dense and persistent expression of soft tannins. AND Considered an important wine, it pairs well with meat-based first courses and is ideal with red meats and mature cheeses. Serve at 18°C.
