Timing, processing methods and uses
The harvest period is the first ten days of November and concerns about 4,000 plants per hectare, from which a production of about 70 quintals is obtained in optimal conditions. During the storage period, it is matured inbarriqueFrench for 4 months, while the aging phase is spent in 500-liter barrels each for 12 months. The refinement period takes place in the bottle for a period of 6-8 months. In its optimal conditions, an alcohol content of 13/14% vol can be detected. and is characterized by a dry flavor, of great structure and elegance, with a dense and persistent expression of soft tannins. It is considered an important wine that prefers combinations with first courses from the earth, ideal with red meats and aged cheeses. It should be served at a temperature of 18 C..
L' Irpinia Campi Taurasini PDO “Saddle” it is a wine with a ruby red color and a scent of cherry, plum and wild berries, to which are added some spicy notes. Its vines, which produce quality grapesAglianico, are located on a clayey soil and are raised using a defined systemback, one of the most widespread cultivation methods in the world, in which the vine is grown in more or less long rows, consisting of poles of wood, concrete, steel or plastic material, on which two or more galvanized steel wires are fixed in tension through sturdier poles positioned at the ends of the row, while thespurred cordon is the pruning technique used.
